Experience:

I have both been sailing and cookong since I was very young, so putting them togeather is a pretty winning combination. I have been in professional kitchens for 18 years now but aside from that in am also a commercial fisherman, working as a single handed skipper on the south coast of Cornwall.

Interests:

I play the flute, guitar and Irish pipe. Player of many, master of none. Im also a shanty singer at home in Cornwall. I love going for long walks and being outdoors. Most things in and on the water.

Dislikes:

Being late. I have a fear of it. If a meal is served late there’s a very good reason for it!

Favourite Food:

Scallops, langostine, crispy chicken balls/anything my mum has on the go.

Favourite Quote: Don’t lift with your back, lift with your deckhand.

What do you never sail without:

Never sail without my sailors knife and spike. Carry a knife save a life. And on blue Clipper my leather note book with all my scribbled recipes in.
